Lemon Dill Salmon

This tasty recipe is quick, healthy & has easy to find ingredients. Even if you’re not a big salmon-lover, give it a try. The butter, lemon & dill give it great flavor. Plus salmon is really, really good for you. Read on for the recipe and why you should be eating more salmon.
I serve it with something green... a fresh salad or roasted green beans. Since you’re already heating the oven, roasting some veggies just makes sense.Why eat salmon? Salmon is a high quality protein that is loaded with omega-3 fatty acids. Most Americans tend to not get enough omega-3s. If that doesn’t mean anything to you, consider this... omega-3s can reduce cholesterol and triglyceride levels (good for your heart), reduce blood clotting, reduce inflammation (help for your joints) and is important for eye and brain development for a growing fetus. Your body can’t make omega-3s on its own, so you have to get it from your diet. Any time you can get something from your diet rather than a supplement is a good thing. Salmon is also a good source of a number of vitamins (including B6, D, niacin) & minerals (phosphorus and potassium).

Tip: A word on food quality. The quality of your meal depends on the quality of your ingredients. Try to find fresh or wild caught salmon when possible.

Total Time: 35 min
Serves: 2-3, depending on salmon size
*A typical serving of salmon is ~6 oz

Ingredients:
~1 lb wild caught Salmon fillets or steaks
2 tbsp butter
¼ cup fresh dill
¼ cup yellow onion, diced finely
1 lemon (½ lemon for cooking, ½ for squeezing on the salmon when served)
Salt & Pepper

•Preheat oven to 400 degrees.
•Sauté the butter (but reserve a little bit to smear in the bottom of the baking dish), onion, dill, juice from ½ lemon, salt & pepper. Let it cook on a low heat for a few minutes, until the onion is translucent.
•Meanwhile, take the tiny bit of the butter that you reserved and rub it in the bottom of a 9 x 13 inch baking dish. Rinse the Salmon & pat dry with a paper towel. Place salmon in the baking dish, skin side down.
•Pour the butter, onion, dill, & lemon mixture over the salmon. Bake for 20-25 minutes. When the salmon is done, it will flake easily with a fork.
•Serve with lemon wedges.
•EAT!
